WEEKENG WOKKING ROUND-UP: COCONUT

It's ROUND-UP time!!! It is my privilege to be given a chance to host this month's Weekend Wokking, a worldwide food blogging event created by Wandering Chopsticks to celebrate multiple ways an ingredient can be transformed to lovely dishes! For this month, the secret ingredient is "COCONUT".

I was really delighted to receive so many entries of creative and lip-smacking dishes from bloggers around the world (just in case if I missed out anyone, please email to me asap). From appetizing soup to tasty savoury mains to mouth-watering desserts! Read on as I am sure you will be running to your nearest grocer for coconuts after reading this.


HOT SOUPS!
Bravo to
Mochacholata-Rita from Hong Kong for her determination and courage. She bought a whole young coconut from the supermarket to crack it up on her own only to find that it is not as easy as it seems to be. Nevertheless, a great effort for her first attempt: Young Coconut and Pork soup. I can imagine how clear and sweet the soup was!

Noob Cook from Singapore submitted her entry featuring my all-time favourite Thai delicacy, Tom Yum Soup with Seafood! Must be really authentic as she bought her Tom Yum paste during her trip to Chatuchak Market in Bangkok. Pass me a bowl please!

NOODLES OODLES
When Imbi & Itchy, a friend of mine who recently moved to Germany told me that she is going to cook something to participate, I knew it would be something really special. True enough, her noodle which she named after herself, Lianne's Dry Prawn Laksa looked simply gorgeous! She happily satisfied her chili cravings by whacking this whole bowl!

Being the first Weekend Wokking entry for
Cobalt Dragon from Ohio, I am totally amazed with his creativity. He reminded me of Remy in Ratatouille. After tasting a dish he loved at a Thai restaurant, he decided to cook his own Coconut Marinated Chicken over Coconut Rice He made up his recipe at home based on what he thought that dish had in it!

Heart and Hearth actually created two lovely Filipino's dishes; one savoury and one sweet dessert. Since the rule of Weekend Wokking only allows one dish per participant, I will only feature the savoury dish here as I find it rather unique to cook stir fry meat and bean using coconut cream/milk. It turned out really good and I reckon it would certainly goes very well with rice; Spicy Minced Pork with French Bean. Cecil aka FoodCraze from Toronto had her first taste of Roti Jala and Kari Kambing (Crepe with Mutton Curry) in Penang, Malaysia and is hooked since then. I agree with her that this is a perfect combo indeed. I just love the colour of her curry; fiery red and flaming orangey!

Using coconut milk instead of yoghurt,
Beach Lover from Long Island cooked Malaysian Curry Chicken to please her Hubby. I agree with Beach Lover's choice as curry tastes so much better using coconut milk than other substitute like milk and yoghurt as it is more aromatic, richer and creamier.

ICook4Fun a Malaysian residing in Pennsylvania created Beef Curry with Peanut Sauce using high quality sirloin. Goodness, I am starving now!

SWEET INDULGENCE
Wandering Chopsticks submitted a Vietnamese sweet delicacy; Vietnamese Coconut Tartlets! Perfect golden in colour, don't you feel like just popping one into your mouth? In her posts, she also listed a number of Vietnamese dishes using coconut, so do go and check it out!

The sisters, TS and JS of
[eatingclub] vancouver shared with us the recipe for Bibingka, a common sweet treat in Manila. I find it very interesting as the recipe also calls for salted duck eggs but since they could not find any that day, these two geniuses substituted it with cheese! Reading the way they described the taste of Bibingka almost made me book the next flight to Manila.

Tropical Parfait anyone? Rita of Pink Bites in Seattle decided to forgo the berries and opt to combine mangoes with coconut instead. The end result? See for yourself!
