"Pregnant Lady" Fried Rice

No-lah!! Am not pregnant! But one doesn't need to find an excuse to savour confinement food, do we? Yumyum...am thinking of vinegared trotters and ginger chicken wine soup at this very moment! Before I dash to the kitchen to ransack my fridge, I better stay focus on my blogpost. I once came upon "Pregnant Lady Fried Rice" in a menu at one of the Chinese restaurant in KL. It is actually Ginger & Egg fried rice. Very catchy name and a perfect one too. Ginger is widely used in confinement dishes to expel wind from the body and is a safe remedy for nausea relief during pregnancy.

Very simple ingredients are used for this dish. All you need is a bowl of overnight white rice, an egg, a big spoonful of julienned ginger and spring onions (for the colour - optional).

Heat up your wok with 1 tablespoon of oil. Crack an egg, put in the ginger and give it a good stir.

Mix the rice into the wok, add seasoning. All I used was a few dash of fish sauce. Alternatively, you could use salt, soya sauce and even chicken granules for extra flavouring. But trust me, just a dash of fish sauce will do. Add the spring onion last and give it a good stir.

Seriously, it only took me 5 minutes to prepare this dish. So easy, so simple and so tasty! If you love ginger, do give this recipe a try! Hmm...maybe I should put this into my menu too..hmm.

You evoke my memory when I was in confinement where my husband cooked ginger fried rice for me. It was one of the best food I had eaten, full of fragrance and taste delicious.

i have no idea this is a confinement dish- is it because of the ginger?

i used to stick to my gran everywhere coz she was a confinement lady and make great ginger chicken, black vinegar chicken.., argh.. drool!

But I don't like ginger leh... And I thought sesame oil is best used for confinement dish? :)

Jason: Yes, sesame oil also important but not everyone love it though. We don't stock it in the kitchen cos I am the only one who take sesame oil here.

my mom made this for me during confinement but normal times she replaces ginger with lots of garlic. very nice also!

Yum, that's simple food as it's best! I actually really like confinement food - it's soo full-bodied and full of flavour! And of course I've never been pregnane either! Hope your restaurant's up and running soon! xx

I prefer garlic fried rice.. those served at jap restaurants.. you can try doing the same thing but substituting the ginger with garlic :D

This looks absolutely delicious! I wanna be pregnant too! When I first saw the headline, I thought you were referring to that dish with the same name at that Claypot Brothers place. But this one is just as enticing!

Oh yum!... Would you also happen to know how to cook the pork vinegar confinement dish? I can't remember what it's called, but I think in Canto it's "Chu Kyuk Cho", if you do, please share!

Ohhh.. so this is pregnant lady rice! :D

My fave comfort food. Sometimes I skip the rice and have just egg and ginger with a good measure of brandy thrown in. More water added in if I want soup. :)

lol u got me there, I really thought you may be preggie when I saw the title. So what makes this confinement food is the generous use of ginger? I love ginger leh hehe ... love this quick fried rice, gonna try doing my fried rice with fish sauce next time! Thanks :)
